What do you do when you have too many eggs?
Make noodles!
- three eggs beaten
- enough flour to make a stiff dough.
- pinch of salt
- Put down lots of flour on your surface and roll, roll, roll.
- Flour the top of the dough when it is as rectangle as can be
- Roll up like a cinnamon roll, but really tight
- Cut and unroll.
- Lay in a pile with plenty of flour sprinkled on top .
- Let dry for at least an hour.
- Add to boiling soup, and let boil for 15 minutes or freeze and use when you make soup the next time.
